The best way to purchase wholesale/retail lamb is to first know the cuts - a cut sheet from American Lamb:
Please note that my costs at the butcher have increased from $70 to $95, fuel has also increased as well as my driving distance. However, your cost to me has only increased by $1 per pound - I am trying to make as much use out of my two hour drive to Charleston as possible when we take lambs to be butcher or I go to pick up the meat. This is to your benefit, thank you!
If you decide to order a whole or half lamb, you must know where the cuts come from to place an order & be pleased when the order arrives - for example: you may not get a whole leg and a sirloin roast from half a lamb.....
the sirloin is part of the leg. Many of us have not been raised on a farm and are not familiar with the specific cuts of any meat, we are too use to a simple trip to the local grocery store!
Wholesale Prices (whole lamb): $12/lb. (Includes butcher fees! )
Wholesale Prices (1/2 lamb): $13/lb. (Includes butcher fees!)
(Two people may share a whole lamb for the lesser price)
